AIP Cinnamon rolls

These were pretty good for gluten-free, lower-sugar, lower-fat cinnamon rolls. As one commenter wrote, the whole thing is like the inside of a Cinnabon roll.

I followed the recipe except for using honey as the sweetener in the filling, I needed to chill the filling so the coconut oil solidified in order to keep it from oozing out when rolling. They needed to bake for about 33 minutes. If you follow the recipe or use maple syrup instead of honey, then they would be vegan.

GF Crepes

I made this recipe for La Chandeleur on the lefse griddle and they were pretty good. Based on the videos I saw, I think it's easier to spread out the batter with a t-shaped tool to make them extra thin. I made do with a spatula.

We had strawberry, banana, Nutella, and peanut butter toppings.

GF Sour Cream Coffee Cake

Golden Milk powder

I've wanted to try golden milk for a while now.  The first week,  I mixed it with coconut milk, So Delicious, I think it was sweetened,  from a box. The second week I tried both almond milk and yogurt. I prefer the coconut milk so far and also cold or on ice.  I tried it hot, but prefer it cold.


I like to quadruple the recipe and store it in a 12 oz jam jar

112 g ground turmeric

16 g ground ginger (plus more to taste)

16 g ground cinnamon (plus more to taste)

8 g ground black pepper (plus more to taste)

ADD-INS (optional)

1 g ground nutmeg

1 g ground cloves

Rhubarb muffins

 I wanted to use up the rhubarb mash I had from making the rhubarb syrup earlier last week. We had some spoiled milk,  so I used that too.

 Bread machine recipes 

Cinnamon swirl bread-I was so happy how this turned out.  Just had the Cinnamon and baked in a loaf pan in the oven.  This was great as toast and on its own in the first couple days.

No-Fuss Focaccia, made in the bread machine.  Stopped the dough cycle early and transformed into the 9x13 pan. Topped with pizza seasoning and chopped sun-dried tomatoes.  They burned a bit,  so next time I will try to mix into the dough better.

Lemon poppyseed muffins- made these without the glaze and they weren't too sweet. R called them salty and I can taste all the baking powder,  so I'm going to call these a bust.

More zucchini

I planted more zucchini than we could use again.  In addition to some of the same hits from last summer, here's what I tried making this summer

I really liked this cake/quick bread. The first time I made it, I vegaized it by using a combination of ground flax and chia seeds and a frozen banana.  I also didn't have hazelnuts so used walnuts instead.  The second time i made it i followed the recipe more closely. I think I liked the first version better.  Perhaps I will chop the hazelnut smaller next time.

We got another box of peaches and I made peach pie, cobbler and crisp. I much preferred the crisp. I think I probably need to up my pie crust game.

I said I would make some gluten free granola for my coworker. I didn’t have a whole lot of the gf oats, so I found a small batch recipe and used it. It was a little different from my usual recipe, but I liked it and more importantly, so did my coworker.

I made this blueberry muffin bread for a Labor Day party. I didn’t have vanilla, so I subbed in maple flavoring. I really liked how it turned out. It went pretty quickly, so other people seemed to like it too.

GF Zucchini Bread

I had some zucchini I needed to use up and I wanted to make something gluten free so I could bring it to work to share. I found a GF zucchini bread recipe from the Power Hungry blog. I followed the recipe exactly, except I used dairy milk and forgot to add the vanilla. I was pretty happy with the texture of the final product, but it wasn’t sweet enough for me. I was trying to figure out how to incorporate honey as the sweetener instead of the coconut sugar. My gf coworker said she liked it, so that made me happy, but if I make it again, I’ll definitely change the sweetness up a bit.

MW30 Day 10

I skipped breakfast today, mostly because I was running around and didn't know what to have. I stuffed an avocado and EBTB seasoning in my backpack, but I didn't get a chance to eat it.

Lunch, another sad salad because customer audit, but I ate the avocado from home that I didn't get a chance to earlier. Same salad as yesterday, but less hard boiled egg.

Dinner - baked sweet potato with ghee and huge spinach salad with tomatoes, olives, and homemade balsamic dressing.

Snacks - I scarfed a couple handfuls of almonds after the audit.

I had a chance to catch up and do a lot of food prep this evening. I made an egg bake based off a recipe from Paleo Running Momma and used some shredded zucchini that was in the freezer from the summer, also onions and mushrooms with a sweet potato base/crust. I added thyme, rosemary, S&P to the eggs before dumping it in.
I also roasted a spaghetti squash and a head of cauliflower. It feels good to get ahead, because I haven't really been eating well because I didn't have stuff prepped.

Lemon poppyseed muffins

I have wanted to make lemon poppyseed muffins for a while. I found this recipe and it was super easy.
I had a bunch of frozen lemon zest, so I used all of it, way more than the recipe called for. I also used about half Greek yogurt and half whole milk for the dairy portion of the recipe.
They were not too sweet, and they produced at least 18 small/regular sized muffins. I froze most, but ate a few. Leela didn't seem to like them that much, but I would definitely make them again.
