GF strawberry rhubarb crisp

 I made this on Leela's request. I used a 9x13 pan and added more strawberry and rhubarb. I probably should have added more topping, but overall, Leela and I enjoyed it.

Potato Waffles

 I made this for dinner when everyone else was having regular flour waffles.

I used chives in place of onions, garlic powder instead of fresh, and arrowroot flour instead of wheat.

I think they turned out great!

Zucchini cake with cream cheese frosting

It was a little dense,  but this was really good.  I vegaized the cake part with flax egg and applesauce, I think.  Maybe it was almond milk.

 The frosting recipe called for a whole package of cream cheese,  and it was a bit much,  so I'd reduce that the next time.

This recipe was great!  I was a bit skeptical about using uncooked chickpeas but it worked out.  I forgot the baking soda in the soaking water and I ended up using 2 eggs and some chickpea flour to get everything to stick together better. Otherwise I followed the recipe and was able to use herbs from the garden.  Probably the last time before everything freezes. 

I also used the tahini sauce recipe on the same site.

Rhubarb muffins

 I wanted to use up the rhubarb mash I had from making the rhubarb syrup earlier last week. We had some spoiled milk,  so I used that too.

More baking

 Bread machine recipes 

Cinnamon swirl bread-I was so happy how this turned out.  Just had the Cinnamon and baked in a loaf pan in the oven.  This was great as toast and on its own in the first couple days.

No-Fuss Focaccia, made in the bread machine.  Stopped the dough cycle early and transformed into the 9x13 pan. Topped with pizza seasoning and chopped sun-dried tomatoes.  They burned a bit,  so next time I will try to mix into the dough better.

Lemon poppyseed muffins- made these without the glaze and they weren't too sweet. R called them salty and I can taste all the baking powder,  so I'm going to call these a bust.

Garden Eggplant

 I like eggplant,  but I probably won't grow in the garden again,  unless I try a smaller Asian variety vs an Italian variety.

More zucchini

I planted more zucchini than we could use again.  In addition to some of the same hits from last summer, here's what I tried making this summer

I wasn't a huge fan and neither were the kids. Folks at work liked it though!

I really liked this cake/quick bread. The first time I made it, I vegaized it by using a combination of ground flax and chia seeds and a frozen banana.  I also didn't have hazelnuts so used walnuts instead.  The second time i made it i followed the recipe more closely. I think I liked the first version better.  Perhaps I will chop the hazelnut smaller next time.

Peach abundance!

Our peach tree exploded with fruit this year.  I made as much as I could with the fruit, including canning and freezing it.  Here are some of what I made:

I used some vegan butter that was a little rancid, so this probably could have been better ,but the vegans liked it.
