Stuffed acorn squash

Followed the approximate ratios in the above recipe 

I used 

2 acorn squash halved and roasted (spray with olive oil and sprinkle with salt) 

Filling 

1 cup textured soy protein cooked in 2 cup of water (this was too much) with some of the mushroom powder 2 bay leaves and about 1/2 teaspoon of thyme 

1/2 cup cranberries 

1 small onion 

1 large garlic clove

1/2 yellow pepper 

1/2 cup of wild rice cooked in 1.5 cups of water 

1/2 cup grated Parmesan cheese 

White rice cooked in the rice cooker 

Combine the filling ingredients 


This turned out ok, but I was the only one to eat it. I'm still on the hunt for the perfect stuffing for stuffed squash
