Roasted Cauliflower

I was looking for a vegetable side dish to serve with lasagna and I had some cauliflower. I made this roasted cauliflower. Which you probably don't really need a recipe for, but it was really good! I'll definitley make it again, despite groans from the rest of the family.

Cheesy "hasselback" potatoes

I was craving scalloped potatoes and I've never made hasselback potatoes. I found this recipe and thought it was perfect.
Despite the fact that this dish took an hour and a half, I was happy how it turned out.
