Beer Cheese Potato Soup

I used this slow cooker recipe for beer cheese potato soup recipe in the instant pot. It turned out pretty good, but I needed to reduce the broth/water liquid to two or 1.5 cups.

I have this recipe on an actual sheet of paper, but want to put it here too. King Arthur Flour's Cinna-Buns are very good! Probably not good for you, but that's another story. They also take quite a while, so I'm going to have to figure out how to make some parts ahead of time.

Skillet Cornbread and Black Bean Sweet Potato Chili

A bunch of people in my Facebook dinner group made skillet cornbread, so I thought I'd try and get away from the recipe from the Aunt Jemima Cornmeal box that I've been using forever. First I tried this recipe from Chowhound a few times. Then, I couldn't remember which recipe I used and couldn't find it during a google search last night. So I tried an Allrecipes recipe. I think I prefer the Chowhound recipe, though I probably don't need quite so much butter as it calls for!

We usually have it with chili, and last night was black bean and sweet potato. I thought it came out pretty good. It wasn't spicy but probably could have used a bit of a kick. I looked up a recipe a few days ago but didn't have it on hand when actually making it. I just went with what I sorta remembered and what was on hand.
1/2-3/4 onion
3 garlic cloves
On sauté in the instant pot
After theses were done, I should have fried the spies a bit, but didn't think ahead this time.
About 2 teaspoons ground cumin
1 teaspoon ground coriander
1 tablespoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1-2 tablespoons salt
I added everything else then put the IP on chili mode for 10 minutes.
3 carrots diced
2 stalks celery diced
About 1 red pepper diced
1 sweet potato diced
A little more than 2 cups cooked black beans
28oz can diced tomatoes
About 1/2 the can worth of water
2 tablespoons tomato paste

I also threw in a couple cilantro cubes I had in the freezer, not sure if they made any difference.

It took quite a while to come to pressure, and the sweet potatoes were quite soft, so maybe could have been cooked a minute or two less. I did a quick release.
